And Dr. Rachel continued, And sold it to us and put it every magazine that we consume and made us think that Crisco was going to healthier than cooking in animal fat.”

The veracity of Dr. Rachel’s statements is not ascertainable. However, reportedly, William Proctor, a candlemaker, and James Gamble, a soap maker, created Crisco before the Civil War.

Soap and candle production used animal fats – lard and tallow, priced per conditions set by the meat business. As a result, costs rose, prompting Procter & Gamble to invest in cottonseed mills. They employed a chemist pioneering the hydrogenation technique. Simply put, it transforms liquid cottonseed oil into a dense, solid fat similar to animal fat. Per advertisements, it was an alternative to counteract the use of lard. Reportedly, crystallized cottonseed oil is the source of the brand name “Crisco”.
